The Colca Sour is the official drink of the province of Caylloma and the Colca Valley and Canyon. This cocktail is based on pisco and sancayo, a citrus fruit consumed in the area that stands out for its flavor and its healing properties for the liver.

The colca sour is one of the main gastronomic attractions in the Colca Valley. Due to a series of factors that go from its own recipe, its way of elaboration, its benefits and its mystique in the communities, they considered that it should have special recognition.

Varieties of Drinks


In the Colca Valley there are about thirty drinks prepared with natural products from the Caylloma province, which will be disseminated as part of the tourist promotion.

There are eight varieties of chicha prepared with diverse and medicinal fruits, in addition to hampi based on quince and prickly pear; Kachiqanqa, pisco boiled with medicinal herbs and salt, according to its followers, is good for gastritis and stomach illnesses.

Another typical drink is challasqa, prepared with fruits and starch, traditional from the districts of the upper part of the Caylloma province of Arequipa.
